  • 3 lbs pork tenderlion, cut into 4 pieces
  • 1 lb bacon
  • 3/4 c. soya sauce
  • 1 tbsp minced onion
  • 1/2 tsp garlic salt
  • 1 tbsp vinegar
  • 1 dash pepper
  • 3/4 c. brown sugar

Step 1

Cut tenderloin in pieces and fully wrap in bacon, then In frying pan add oil and put on HI.
When oil is hot, put the wrapped tenderloin in pan and sear all sides until crispy.

Put into crock pot, add sauce over tenderloin then place in fridge overnight.

In the morning turn crockpot on and cook for about 6 hours.

Alternatively you could cook it in the oven. Pork tenderloin is an extremely lean cut of meat. So you really need to be careful not to overcook it. Remember, the pork will continue to cook while resting. As long as your oven is not super weak, 25 minutes at 180C/350F for a 500g/1lb piece of pork tenderloin is the perfect roasting time. 25 minutes might not seem like long, but remember you are also searing the pork which starts the cooking process!

Or if you don't brown the bacon first... Bake at 425° for 25 minutes or until a meat thermometer inserted into thickest portion registers 155°. Increase oven temperature to broil. Broil 5 inches from heat 3 to 5 minutes or until bacon is crisp. Remove from oven; cover pork with foil, and let stand 10 minutes or until thermometer registers 160°.
