Ingredients
- 1 tbsp olive oil
- 1 shallot, thinly sliced
- 1 tbsp finely chopped peeled fresh ginger
- 1 garlic clove, finely chopped
- 3/4 lb snap pease, trimmed
- 2 tbsp soy sauce

Step 1
Heat oil in a large skillet or wok over moderately high heat until hot but not smoking, then sauce shallots, ginger and garlic, stirring for 1 minute.
Add peas and sauce, stirring for 2 minutes. Add soy sauce and simmer, stirring occasionally until peas are crisp-tender, about 2 minutes. Season with salt and pepper.
