Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1/2 onion - chopped
  • 1 cup of corn
  • 1 can of kidney beans (drained)
  • 1 can of diced tomatoes with green chilies (aka rotel)
  • 1/2 package of taco seasoning
  • garlic salt to taste
  • 2 cups of cooked rice (any rice)
  • 8 oz of shredded cheddar or fiesta cheese

Preparation

Step 1

1. First brown your ground beef or turkey
2. Add in chopped onions, taco seasoning,
tomatoes, beans and corn
3. Stir to combine and set aside
4. Spray the inside of your crock pot casserole dish with non-stick cooking spray
-Spread the cooked rice in the bottom of the crock pot – Sprinkle with garlic salt – Spoon the meat mixture over the rice – Top with cheddar or fiesta cheese – Place lid on top and cook on high for 2 to 3 hours
