Beef and Barley Soup

Ingredients

  • 500 g lean stewing beef or soft shin
  • 2 1/4 litres of water
  • 6 carrots sliced
  • 1 onion chopped
  • 125 ml of celery chopped
  • 3 potatoes peeled and quartered
  • 250 g pearl barley
  • 1 Tbs salt
  • 2 ml white pepper
  • 2 beef stock cubes

Preparation

Step 1

Put the water into a large pot with the beef.
Bring to the boil and remove any scum.
Add the remaining ingredients and cover.
Simmer gently for about 3 hours
