Fruit Snack Tips
To create sweeter snacks, use fruits at their ripest stage. If they’re not mature and tart, add 1-2 tablespoons of honey to taste.
For a deeper flavor, try using fruit juice concentrate instead of fruit juice.
If using fresh fruit like figs, papaya, pineapple or pears, first boil the peeled cut-up fruit for 5 minutes or the gelatin will not set properly.
Fruit snacks made with fruit will have a fruit leather texture, instead of a gummy bear texture.

Ingredients
- 1 cup frozen mixed berries
- 2 1/4 cups all-natural apple juice, cold and divided
- 2 packets of gelatin (1 packet = 2 1/2 tsp)

Step 1
In a small saucepan over medium heat, combine berries and 1 1/2 cups juice and bring to a boil. Cook berries until they start to soften.
Puree the berry and juice mixture with an immersion blender or regular blender until smooth. Set aside.
In a large bowl, sprinkle 2 packets of gelatin over the remainder cold juice and let stand for 1 minute.
Add the puréed mixture to the cold juice and gelatin mixture and stir until gelatin completely dissolves, 2-3 minutes.
Line a 13x9x2” pan with plastic wrap then pour the mixture on top. Allow to set until firm, approximately 3 hours.
Remove from pan by pulling out with plastic wrap, then cut into 1” squares and serve.
Store remaining fruit snacks in the refrigerator.
