Ingredients
- 3/4 cup yellow cornmeal
- 1/3 cup grated Monterey Jack cheese
- 2 tablespoons butter, melted
- 1/4 teaspoon salt
- 3/4 cup boiling water
- 2/3 cup frozen corn, thawed

Preparation
Step 1
Process cornmeal in food processor until finely ground cornmeal. Transfer to large bowl. Mix in cheese, butter, salt and enough water to create a very thick batter. Add corn.
Over medium heat in large skillet, fry like pancakes in 1 tablespoon of butter for each corn cake. Cook until golden.
