Pumpkin Butter Oatmeal Pie

Ingredients
- Pie Crust
- 1 egg, slightly beaten
- 1 T water
- 1/2 c butter
- 2/3 c regular rolled oats
- 1/2 c light corn syrup
- 3 eggs
- 1-9 oz. jar pumpkin butter
- 3/4 c canned pumpkin
- 1 t vanilla
- 1/2 t cinnamon
- 1/4 t nutmeg
- 1/8 t salt

Step 1
Preheat oven to 450. Line pie crust with double thickness of foil and bake pie for 8 minutes. Remove foil and bake for 4-5 minutes more or until it is set and dry. Remove from oven and turn down to 350.
For filling, in large skillet, melt 1 T butter over low heat, cook about three minutes or until golden brown. Add oats. Cook and stir 3-4 minutes or until toasted, let cool.
In a large microwaveable bowl, microwave remaining butter, 30-45 seconds or until melted. Stir in corn syrup, whisk in remaining eggs, pumpkin butter, pumpkin, vanilla, cinnamon, nutmeg, and salt. Stir in oats. Pour filling into crust.
Cover edge of crust with foil and bake 45-50 minutes or until filling is set. Cool on a wire rack. If desired, serve with whipped cream.
