This is one of my favorite tex mex casseroles even though I haven't made it in a while. It is delicious!

Ingredients

  • 1 lb lean ground beef
  • 1 16-oz can pinto beans
  • 1 8-oz can tomato sauce
  • 1 15-oz can diced tomatoes
  • 1 pkg taco seasoning
  • 1 cup shredded cheddar cheese
  • 3 1/2 cups Fritos Corn Chips
  • 1 1/4 cups sour cream
  • 1/4 cup sliced green onions

Preparation

Step 1

First brown the meat. Drain it, return it to the pan, and stir in the beans, tomato sauce, taco seasoning, and 1/4 cup of the cheese. Sprinkle 1 cup of the Fritos on the bottom of a greased 8x8 baking dish. Cover the Fritos with the meat mixture. Bake at 350 for about 20 minutes and remove from oven. Now spread the sour cream over the meat mixture and top with the remaining Fritos and cheese. Return to oven and bake for another 4-5 minutes. Remove from oven and enjoy!
