Ingredients

  • 2 TBS olive oil
  • 1/2 cup (2.5 oz) yellow onion (diced)
  • 1/2 cup (2.5 oz) green bell pepper (diced)
  • 1 tsp minced garlic
  • 1 28 oz can crushed tomatoes
  • 1/4 cup red wine
  • 1 TBS dried parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 16 oz rotini pasta
  • 3 cups water
  • 1 14 oz bag bite-size meatballs (thawed)
  • 1 cup Italian blend cheese

Preparation

Step 1

Heat olive oil in saucepan. Saute onion, bell pepper, and garlic until soft. Stir in crushed tomatoes. Use red wine to rinse the can, then pour into saucepan. Stir in parsley, basil, oregano, sugar, salt, and black pepper. Simmer on low until ready to use.

Preheat oven to 425.

Spray 9x13 baking dish with cooking spray. Pour pasta and water into dish. Stir in marinara sauce and meatballs. Cover dish tightly with foil. Bake 30 minutes.

Remove from oven. Sprinkle with cheese. Allow to set until cheese is melted.
