Ingredients
- 3 cups flour
- 1-2 teaspoons salt
- 1/4 teaspoon yeast
- 1 1/2 cups water

Step 1
Mix dry ingredients first and add water all at once. Mix until it comes together and until there are no dry spots. Don't knead. Place in mixing bowl and cover with plastic covering (I use the covers w/ elastic that look like a shower cap). Leave at room temperature for 15-18 hours.
Sprinkle flour over the top of the dough to prevent it from sticking to your hands. Work the flour into the dough briefly. Place in greased dutch oven and cover with lid. Let set for 1-3 hours. Preheat oven to 500 degrees. Bake for 20 minutes with the lid on. If the top is not brown, uncover after the 20 minutes and bake an addtional 5 minutes. Let cool on cooling rack.
