Ingredients
- 1 stick of butter
- 4 medium chopped onions
- 6 1\2 cups chicken broth
- 3 pounds fresh asparagus...trimmed, tips reserved, stalks coarse chop or
- 3 ten ounce pkgs frozen spears unthawed
- Sour cream

Step 1
Melt butter in large pot over medium heat. Add onions; saute until tender about 10 minutes. Add 6 cups broth, then fresh asparagus. Bring to boil. Reduce heat; cook until tender, about 10 min. or 20 min. for frozen. Cool slightly.
With emulsion blender puree mixture. Thin with more broth if needed. Season with salt and pepper. Serve with a drizzle of sour cream.
