Quick Spaghetti Dinner IP

Dinner on the fly, no problem, this One Pot Instant Pot Pressure Cooker dinner of Spaghetti and Homemade Sauce is sure to please.

Ingredients
- 2 Tablespoons Extra Virgin Olive Oil
- 1/2 Onion chopped
- 2 cloves Fresh Garlic minced
- 1 pound Spaghetti broken in half or other Pasta
- Sauce
- 28 ounces Diced Tomatoes
- 3 ounces Tomato Paste
- 15 ounces Tomato Sauce
- 2.5 cups Chicken Stock/Broth (or water)
- 2 teaspoons Dried Basil
- 1 teaspoon Dried Oregano
- 2 teaspoons Parsley Flakes, dried
- 1 teaspoon Brown Sugar
- 1 teaspoon Sea Salt
- 1/4 teaspoon Red Pepper Flakes
- 1/4 teaspoon Freshly Ground Black Pepper
- 1/4 cup Red Wine/Cabernet a good Cabernet!
- 1 teaspoon Fennel Seeds, crushed
- Parmesan Rind chunk optional

Preparation
Step 1
Push Sauté or Browning function on Pressure Cooker. Allow it to heat and then add oil.
Add onions and sauté for 2 minutes. Add garlic and sauté for 1 more minute.
Add the rest of the ingredients.
Lock on lid and seal pressure valve. Cook on High Pressure for 5 minutes.
When Beep sounds, allow a 5-minute Natural Pressure Release, then carefully release the rest of the pressure.
Recipe Notes
If using Rigatoni or another sturdy pasta, cook for 6 minutes.
The general rule of thumb is to cook the pasta for 1/2 of the time, minus 2 minutes, erring on the lowest side indicated on the package.
