Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1/2 Onion chopped
  • 2 cloves Fresh Garlic minced
  • 1 pound Spaghetti broken in half or other Pasta
  • Sauce
  • 28 ounces Diced Tomatoes
  • 3 ounces Tomato Paste
  • 15 ounces Tomato Sauce
  • 2.5 cups Chicken Stock/Broth (or water)
  • 2 teaspoons Dried Basil
  • 1 teaspoon Dried Oregano
  • 2 teaspoons Parsley Flakes, dried
  • 1 teaspoon Brown Sugar
  • 1 teaspoon Sea Salt
  • 1/4 teaspoon Red Pepper Flakes
  • 1/4 teaspoon Freshly Ground Black Pepper
  • 1/4 cup Red Wine/Cabernet a good Cabernet!
  • 1 teaspoon Fennel Seeds, crushed
  • Parmesan Rind chunk optional

Preparation

Step 1

Push Sauté or Browning function on Pressure Cooker. Allow it to heat and then add oil.

Add onions and sauté for 2 minutes. Add garlic and sauté for 1 more minute.
Add the rest of the ingredients.

Lock on lid and seal pressure valve. Cook on High Pressure for 5 minutes.
When Beep sounds, allow a 5-minute Natural Pressure Release, then carefully release the rest of the pressure.

Recipe Notes

If using Rigatoni or another sturdy pasta, cook for 6 minutes.
The general rule of thumb is to cook the pasta for 1/2 of the time, minus 2 minutes, erring on the lowest side indicated on the package.
