Ingredients
- 1 1/2 Tbl EVOO
- 1 Tbl white wine vinegar
- 1/2 tsp Dijon mustard
- 1/4 tsp black pepper
- 1/8 tsp salt
- 1/4 cup vertically spliced red onion
- 3 garlic cloves thinly sliced
- 9 oz fresh spinach

Preparation
Step 1
Combine 1st 5 ingredients in a bowl stirring well with a whisk
Heat in large skillet
Add onion & garlic---sauté for 2 minutes
Gradually add spinach- - toss until wilted
