Ingredients

  • 1/2 tbsp (7 mL) canola oil
  • 1 lb boneless, skinless chicken breasts, cut into 1" (2.5 cm) cubes
  • 2 cups red, green and yellow peppers, cut into 1/2" (1 cm) pieces
  • 1 cup onion, cut into 1/2" (1 cm) pieces
  • 1 can (10 oz) CAMPBELL'S® Condensed Tomato Soup
  • 1 can (14oz) pineapple tidbits, well drained
  • 1/4 cup honey
  • 1 ½ tbsp less sodium soy sauce
  • 2 cloves garlic, minced
  • 1 1/2 tsp grated fresh ginger root
  • 3 cups hot cooked rice

Preparation

Step 1

1. Brown chicken well on all sides in heated oil at medium-high heat in large skillet. Add peppers and onion and stir and cook for 3 minutes.

2. Add soup, pineapple, honey, soy sauce and garlic. Heat to a boil. Reduce heat and simmer until chicken is cooked through – about 5 minutes. Stir in ginger.

3. Serve over hot cooked rice.
