Mexican Wonton Cups

Tasty little cups with cheese, tomato and jalapeno filling. You can make a batch of the filling and leave it in a sealed container in the fridge for a few days. I do this to make a handful at a time.

Ingredients

  • 24 Wonton Wrappers
  • 8 oz Cream Cheese (or a tad less)
  • 1 Cup Sour Cream
  • 6-10 pieces of Bacon (crumbled)
  • 1-2 Cups Shredded cheese (calls for 2, but used about 1.5)
  • 1 Can Ro*Tel tomatoes w/ Chilies
  • 1-3 Jalapenos chopped

Preparation

Step 1

1) Preheat oven to 350
2) Spray Muffin tins with cooking spray (don't be shy...)
3) Place 1 wrapper in each cup. Bake for 8-10 minutes or until lightly browned. (I typically use convection at this point and they're ready in about 6 minutes)
4) Remove wrappers and let them cool slightly
5) In mixing bowl, combine Cream Cheese, Sour Cream, Bacon, Jalapeno, Ro*Tel and most of the Shredded Cheese (Save some for topping)
6) Spoon filling into wrappers and top with remaining sprinkle cheese
7) Put back in the oven for another 8-10 minutes until golden brown and melty
