Ingredients

  • 2 large cans diced or crushed tomatoes
  • EVOO
  • 3 T minced Garlic
  • Salt
  • 3 T dried parsely
  • 1 T dried oregano
  • 1 bottle pinot noir

Preparation

Step 1

Heat the oil in a large non stick dutch oven, add the garlic and stir contstantly for a few seconds and promptly add the tomatoes.

Stir in a liberal amount of salt, about 1 T, but taste before adding more, you can easily over salt this sauce.

Add the dried herbs and stir. Allow to simmer for 30 minutes.

Add the entire bottle of wine and stir in completely. Allow to simmer for 60 minutes more and stir. If you used diced tomatoes, use a stick blender and puree the sauce. If not just cover, reduce the heat to low and allow to simmer for 2-3 more hours.

This makes about 2 gallons of sauce so can what you don't use for later use.
