  • 3 tablespoons of whole milk cottage cheese

Step 1

Preheat oven to 300 degrees.

Chill the bowl before whipping egg whites.

Line cookie sheets with parchment paper.

Separate the eggs very carefully, there must be NO yolks in the whites.

In a bowl, mix together the egg yolks and the cottage cheese.

In the chilled bowl add the lemon juice to the egg whites and beat the whites on high speed until fluffy and form stiff peaks. (You can use a hand mixer for this.)

Very carefully fold the egg yolk mixture into the egg whites until mixed, but try not to break down the fluffiness.

Put a scoop of the cloud bread mixture on a warm dry frying pan. Cooked it for a few minutes then flip and squish it flat.
