Charred Sweet Potatoes with Lemon Dressing 1 Picture

Ingredients

  • 2 lb. sweet potatoes, preferably garnet
  • 2 T plus 1/4 c olive oil
  • S&P
  • 1 lemon
  • 5 anchovy filets
  • 1 clove garlic
  • 1/2 T crushed red pepper
  • 4 T unsalted butter
  • 3 T veg. oil
  • 6 caper berries, or 2 T capers
  • 1/4 c parsley, with stems

Preparation

Step 1

Poke potatoes with fork, and coat w/2 T oil. Roast at 350 for 40-50 min. Cool & tear into bite-sized pieces. Zest lemon; peel and cut out segments. Heat 1/4 c oil; cook anchovies, garlic & CRP. Add butter and cook til bubbly. Take off heat and mix in 1 t zest and segments.Heat 3 T oil and fry capers; drain. Drizzle and top potatoes.
