Ingredients

  • 3/4 cup chocolate chips
  • 1 c finely shredded, unsweetened coconut
  • 1/2 c honey
  • 1/4 t sea salt
  • 16 almonds

Preparation

Step 1

Line a baking sheet with parchment paper.

Use a double boiler to melt chocolate.

While the chocolate is melting, place coconut, honey & salt into a small bowl and stir to combine.

Use a spoon to place 16 small circles of chocolate onto the parchment paper. Spread the chocolate so it's the width of a tablespoon, as this will create the bottom of the candy. Use a tablespoon to scoop the coconut mixture and place it on top of the chocolate on the parchment paper. Repeat until you've used all 16 tablespoons of the coconut mixture.

Place one almond on top of the center of the coconut mixtures. Spoon the remaining melted chocolate over the coconut/almond mounds. Place the baking sheet in your refrigerator for 15-20 minutes.
