Ingredients
- Alternatives:
- 1 cup chopped nuts
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1/3 cup canola or neutral tasting oil
- 1 large egg
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1 medium golden delicious apple, unpeeled diced into 1/4 " pieces
- 1/2 cup dried cranberries
- 1/2 c shredded coconut
- 1/4 c cacoa nibbs
- 1/2 c applesauce instead of apples
- 1/2 c brown sugar
- other possibilities: almond butter, chia seeds, goji berries

Step 1
Preheat 350 degrees
toast nuts for 8 minutes. Whisk dry ingredients together. whisk wet ingredients, then add dry ingredients. Add nuts. Makes 8 1/2 c cookies, baked 25 minutes on parchment paper.
