  • 4 cups water
  • 2 large sweet potatoes
  • scallions
  • craisins
  • toasted slivered almonds
  • 1/4 cup rice vinegar
  • 1/4 cup oil
  • 2 T honey
  • salt/ pepper

cube sweet potatoes, toss with salt and oil. bake for 20 minutes at 375
cook quinoa and add all ingredients
