Ingredients
- 2 cups quinoa
- 4 cups water
- 2 large sweet potatoes
- scallions
- craisins
- toasted slivered almonds
- 1/4 cup rice vinegar
- 1/4 cup oil
- 2 T honey
- salt/ pepper

Step 1
cube sweet potatoes, toss with salt and oil. bake for 20 minutes at 375
cook quinoa and add all ingredients
