Ingredients

  • 1/2 cup finely diced onion
  • 1 tbs minced fresh garlic
  • 1/2 tsp ground coriander
  • 1 tbs olive oil
  • 2 cans black beans and liquid (15 oz each)
  • 2 tbs fresh orange juice
  • 1 tbs minced chipotle in adobo sauce
  • 1 1/2 tsp honey
  • 1/4 tsp minced orange zest
  • 2 tsp fresh lime juice
  • salt

Preparation

Step 1

Sweat onion, garlic and coriander in oil in a saucepan over medium low heat, covered until onion softens, 5 minutes. Stir in beans, orange juice, chipotle, honey and zest; simmer until thickened 10 minutes. Stir in lime juice and season beans with salt.
