Ingredients
- 3 large bananas (mashed)
- 1/3 cup butter (clarified)
- 2 tablespoons honey
- 1/2 cup coconut flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon cinnamon
- 1/3 cup walnuts (chopped)
- 4 large eggs
- 1 tablespoon vanilla extract

These paleo banana nut muffins come straight from the Primos Test Kitchen and turned out way better than I thought they would. They’re delicious as a quick breakfast or even as an evening desert. Add a drizzle of honey or melted butter to these hot treats for a more decadent touch.
Directions
Preheat oven to 350 degrees
In a large bowl, combine your wet ingredients and mix well: bananas, honey, butter, vanilla extract and eggs.
In another bowl, combine your dry ingredients and mix well: coconut flour, salt, cinnamon, baking powder and baking soda.
Slowly whisk dry ingredients into the wet ingredient bowl until well combined.
Pour mixture into greased muffin tins (or tins dressed with paper liners) and place in oven to bake for 20-25 minutes, or until a toothpick inserted into the center of muffin comes out clean.
