Low Fat Spaghetti and Meatballs 1 Picture

Ingredients

  • 1/2 eggplant japanese
  • 4 Oz parmiagianno
  • 6 oz lean ground turkey
  • 2 oz ground pork
  • 4 oz lean groun beef 94%
  • 2 cups Kamut
  • 1 cup chopped onion
  • 2 garlic cloves chopped
  • 1/4 cup parsley
  • 1 egg white
  • olive oil spray
  • 1 1/2 cups diced red pack tomatoes
  • 1 1/2 cup pureed red papck tomatoes
  • pinch red pepper flakes
  • 1 cup chicken stock
  • 1 lb spaghetti or kamut spaghetti

Preparation

Step 1

1. cut egg plant in half and deeply score and salt to bring out water

2. place under broiler for 4 minutes and then place in micro wave for 2 minutes set aside

Sauce:

1. spray non stick pan with olive oil spray

2 . add 1/4 cup chopped onions then 1 clove minced garlic and pinch of red pepper flakes and saute

3. add 1 1/2 cups of redpack diced tomatoesd and 1/1/2 cup redpack puree

4. simmer for an hour

Meaatballs

1.add 1/2 cup chicken stock, 1 egg white, 1 chopped garlic glove 1/2 cup chopped onion 1/4 cup parsley in a blender and mix

1. in a large bowl add meat, 1/2 cup of scraped and chopped eggplant pulp
2 oz parmigianno, blender mix, Kamut crushed in your hands, mix gently
2. Roll meatballs and fry or bake

Spaghetti:

Cook and add to sauce and add 1 ladle of pasta water.

Add meatballs

sprinkle with parm a pich of red pepeer flakes and parsley
