Ingredients
- 1 cup quinoa
- 1 bunch asparagus
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 cup grape tomatoes
- 1/4 cup chopped basil
- 1/2 cup herb & garlic goat cheese crumbles

Step 1
Cook quinoa according to package directions. Meanwhile, blanch asparagus, tough ends removed, in boiling water for about 1 minute. Transfer asparagus to an ice water bath to stop cooking. Drain once cooled, roughly chop and set aside. Whisk together olive oil, red wine vinegar, salt and pepper Mix in cooked and cooled quinoa, grape tomatoes, basil and asparagus. Transfer to serving bowl and top with cheese crumbles.
