Ingredients

  • 20 Jumbo Pasta Shells
  • 1 Tbsp Olive Oil
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 4 hot Italian sausages
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup sour cream
  • 1-1/4 cup Italiano shredded cheese
  • 2 cups pasta sauce
  • salt and pepper to taste

Preparation

Step 1

Cook pasta shells according to package directions. Drain and rinse under cold water, set aside.
In a large pot, over medium heat, saute onions and garlic in olive oil for five minutes.
Slice sausages in half lengthwise. Remove meat and add to garlic mixture. Discard casings.
Continue to cook, stirring and breaking up sausage until sausage is completely cooked - about 20 minutes.
Remove from heat. Place in large bowl and let cool.
Combine cooled meat mixture with parsley, sour cream, 1 cup cheese, salt and pepper. Mix well.
Preheat oven to 350F.
Spread half the sauce in 13 x 9 pan.
Stuff each shell with sausage mixture. Place in pan in single layer.
Spoon pasta sauce over top and sprinkle with remaining cheese.
Bake the shells for 30 minutes or till heated through and cheese is melted.
