Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, peeled and sliced
  • 1 clove garlic, minced or thinly sliced
  • 2 roma tomatoes, cut into wedges
  • 2 tablespoons cashews
  • 1 tablespoon mango chutney
  • 1 teaspoon garam masala blend
  • 1/2 tablespoon ginger root, peeled minced
  • 3 1/2 ounces light coconut milk
  • Salt and pepper, to taste
  • 8 ounces boneless, skinless chicken or turkey breast, cut into large cubes
  • fresh coriander leaves, to garnish
  • rice of choice, to serve

Preparation

Step 1

Put the oil and sliced onion in the ActiFry. Cook for 5 minutes.

Add tomatoes, chutney, ginger root, garam masala and coconut milk. Season with salt and pepper and cook 5 minutes.

Add poultry cubes and finish cooking 5 to 7 minutes. Add the coriander right before serving.
