Ingredients
- 1 tablespoon olive oil
- 1 small onion, peeled and sliced
- 1 clove garlic, minced or thinly sliced
- 2 roma tomatoes, cut into wedges
- 2 tablespoons cashews
- 1 tablespoon mango chutney
- 1 teaspoon garam masala blend
- 1/2 tablespoon ginger root, peeled minced
- 3 1/2 ounces light coconut milk
- Salt and pepper, to taste
- 8 ounces boneless, skinless chicken or turkey breast, cut into large cubes
- fresh coriander leaves, to garnish
- rice of choice, to serve

Preparation
Step 1
Put the oil and sliced onion in the ActiFry. Cook for 5 minutes.
Add tomatoes, chutney, ginger root, garam masala and coconut milk. Season with salt and pepper and cook 5 minutes.
Add poultry cubes and finish cooking 5 to 7 minutes. Add the coriander right before serving.
