Ingredients

  • 1-3/4 cup flour
  • scant 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 stick butter
  • 1-1/2 cups sugar
  • 4 eggs
  • 3 cups pecan halves
  • 1-1/4 cup crasins
  • 1 tsp vanilla

Preparation

Step 1

adjust rack in oven 1/3 from bottom preheated to 350 degrees

Spray pam in 2 loaf pans,dust with fine bread crumbs(remove any excess)

In mixer,beat butter until soft,add vanilla sugar and eggs(one at a time)
Add dry ingredients(salt,baking powder)Beat on low until just mixed in
Stir in nuts and craisins.

Place half of batter in each pan.Smooth tops.With back of spoon,form a trench down in center of loaf to prevent large mound in middle.

Bake on same rack for 55 minutes.Reverse pans from front to back after 3o minutes

Remove from oven.Place wet paper towel over biscotti ,touching the tops(to prevent a crust from forming) Cover with foil to keep in steam.

Cool completely

Remove from pans and wrap in plastic wrap. Refrigerate overnight(at least 4 hours)
Slice with sharp knife,very thin.Lay pieces flat om cookie sheets

Bake slices at 325 for 15-25 minutes or a little longer.Remove when brown
