What to do when you've got candy overload? Use that candy to make Candy Bar Cheesecake Pie! With just about any combination of leftover Halloween candy {or Christmas or Easter candy, for that matter}, you can bake up this totally tasty pie.

Ingredients
- 2 (8 oz.) packages cream cheese, at room temperature
- 1/2 c. granulated sugar
- 2 eggs, at room temperature
- 1/2 tsp. vanilla extract
- 2 c. chopped candy bars* {about 16 fun-size bars}
- 1 8-inch chocolate cookie pie crust
- 1/4 c. caramel ice cream topping

Preparation
Step 1
With an electric mixer, beat cream cheese, sugar, vanilla extract, and eggs on medium speed until smooth.
Stir in 1 and 1/2 cups of the chopped candy bars {reserving the remaining 1/2 cup for the top}.
Pour mixture into the pie crust. Bake at 325 degrees until set, 45 - 50 minutes. Remove from the oven and cool on a wire rack for 30 minutes.
Sprinkle the top with remaining 1/2 cup chopped candy bars. Chill until firm, about 8 to 10 hours or overnight. Drizzle with caramel ice cream topping.
*NOTE: I used a combination of Snickers, Milky Way, 3 Muskateers, and Twix inside the pie, and the same combo plus some plain M&Ms on the top. M&Ms inside the pie stay intact and add a crunchy element to the pie's texture ... which is fine, but we prefer our pie's cheesecake filling to stay creamy.
