Ingredients
- BATTER:
- 1-1/2 cups shifted all-purpose flour
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup sugar
- 1/3 cup melted butter/margarine
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 apple
- Dried cranberries to taste
- STREUSEL:
- 1/2 cup light-brown sugar (firmly Packed)
- 2 tablespoons soft butter/margarine
- 2 tablespoons all-purpose flour
- 1 teaspoon cinnamon
- OTHER:
- Greased 8x8x2 inch pan or 9x1-1/2 inch layer cake pan

Step 1
MAKE STREUSEL (Set to side)
1. Combine all ingredients in small bowel
MAKE BATTER:
1.Shift flour with baking powder and salt in bowl and set to side.
2. In medium bowel, with rotary beater, beat egg until frothy; then beat in sugar and melted butter until well combined.
3. Stir in milk and vanilla.
4. With wooden spoon, beat in flour mixture (Step 1) until well combined.
5. Core and peel apple; cut approximately 6-7 thin slices (set to side to garnish top); Chop remainder of apple into bite-sided chunks and add to batter.
6. Add cranberries to batter (amount added is to your taste)
PREHEAT OVEN TO 375 degrees.
COMBINE STUFF:
1. Pour 1/2 of batter into greased pan and spread out to cover entire bottom of pan.
2.Sprinkle 1/2 of Streusel mix on top of batter.
3. Pour remainder of batter into pan and spread out (will tend to mix with streusel but that's OK)
4. Sprinkle on remainder of streusel.
5. Decorate with apple slices you set to side.
PUT IN HEATED OVEN
Approximate cook time: 20-35 minutes
Recommend checking at 20 minutes (toothpick should come out clean)
