  • 2/3 c. Pumpkin Pie filling
  • 3 Eggs
  • 3/4 c. Flour
  • 1 c. Sugar
  • 1 tsp. Lemon Juice
  • 1 tsp. Baking Powder
  • 1/2 tsp Salt
  • 1/4 c Powdered Sugar

  • Ingredients:
  • 1 c. Powdered Sugar
  • 1/4 c. Butter
  • 1/2 tsp. Vanilla
  • 1 block of Philly Cream Cheese

Preparation

Step 1

Beat eggs for 5 minutes at high speed. Gradually add sugar. Add pumpkin and lemon juice. In separate bowl, combine flour, salt and baking powder. Add to pumpkin mixture and blend well. Line 10x15x1in pan with Parchment Paper, grease and flour. Pour directly onto parchment paper and bake. Bake at 375 for 15 minutes. Sprinkle a tea towel with powdered sugar. Flip cake onto tea towel, removing paper and roll up. Let it sit until cool.

Combine all filling ingredients until creamy. Unroll cake carefully and spread filling evenly and re-roll. Wrap in Saran Wrap and keep in refrigerator. Slice and serve!
