Apple Crisp Cookie Cups** 10-12-17
Preheat oven to 350. Makes 18 cup cookie cups.
Cookies: Cream butter, white sugar and brown sugar. Beat eggs in one at a time, stir in vanilla. Combine flour, baking soda, salt, cinnamon. Stir into the creamed mixture. Mix in oats. Cover and chill dough for at least one hour. Place dough in cups and push down on middle to create a bowl. Cook at 350 for 20 min.
Apples: Melt butter in fry pan, add rest of ingredients. Bring to boil then simmer until apples are cooked.
When muffins are cooked remove from oven and push down middle of cup cakes with bottom spice jar to create an indentation. Fill each indentation with apple mixture. Serve.
If some dough is left over make cookies. Babe for 12-14 min.
