Ingredients
- 2 1/2 lb. sugar pumpkin, seeded and cut into 3/4" - 1" cubes
- 4 - 6 shallots, quartered or halved
- 6 - 10 cloves garlic, peeled and halved
- 3 tablespoons EVOO
- 1 sprig rosemary
- pinch each freshly grated nutmeg and ground cinnamon
- Maldon salt and freshly ground black pepper to taste

Step 1
Preheat oven to 450.
Toss everything together in a large bowl and lay out on a parchment-lined baking sheet.
Roast until pumpkin is tender, 30 to 35 minutes, tossing once.
