Banan-Peanut Butter Muffins

Anyone who know me knows I go nuts for peanut butter. Creamy or chunky. It doesn't matter, If a dish or dessert includes peanut butter, I am the first one in line. This recipe was inspired by the peanut butter-banana sandwiches my mother made for me when I was a kid. There was nothing I loved morek, expecially when the peanut butter got stuck to the roof of my mouth. These are oh-so-easy to eat and are a welcome surprise in a lunch box or as an afternoon snack.

Ingredients

  • Muffins:
  • vegetable oil spray 3 T. sugar
  • 1/12 c. all-purpose flour
  • 1 t. baking powder
  • 1 t. baking soda
  • 1/2 t. kosher salt
  • 1/3 c. vegetable oil
  • 3/4 c. sugar
  • 1 large egg, lightly beaten
  • 1 t. banana extract
  • 4 ripe bananas, mashed
  • 1 c peanut butter chips
  • Topping:
  • 1 ripe banana sliced into 12 even slices
  • 3 T. sugar

Preparation

Step 1

Preheat the oven to 350. Coat a nosntick 12 cup muffin pan witht eh vegetable oil spray. Divide the 3 T. os sugar equally among the bottom of the muffin cups. Gently shake the pan to evenly coat the sides and bottoms fo the cups with sugar.
TO amke the muffins: place the flour, baking powder, baking soda, and salt in a medium bowl. With a whisk lightly mix evenly distrubut the ingredients. Set aside.
Put the vegetable oil, sugar, egg, banana extract, and mashed bananas in the bowl of an electric mixer and using the whisk attachment, mix the ingredients until completely combined. Add the dry ingredients and mix on low speed until all the ingredients are evenly incorported. Using a spatula, fold in the peanut butter chips.
TO prepare the topping, toss the banana slices with the sugar. Divid the batter evenly among the muffin cups filling each cup a little over three fourths of the way full. Top each muffin with a sugared slice of banana.
Bake the muffins for 22-26 minutes, until a tester inserted into the center of a muffin comes out clean. Transfer the muffin pan to a wire rack and cool for 8 minutes before turning out the muffins.
