Garlic Confit Toast

Ingredients
- 1 head garlic, cloves peeled
- 1 stick unsalted buttere
- 1 c grated Parmesan cheese
- 1 tsp lemon zest
- 2 tsp chopped oregano
- 1/2 tsp red pepper flakes
- Kosher salt
- 1 baguette

Step 1
Cook garlic and butter in a small covered saucepan over medium low heat until garlic is golden brown and very soft, 15-20 minutes. Tranfer to medium bowl and let cool.
Add parmesan, oregano, lemon zest and pepper flakes. Mash garlic to a paste, season with saltl.
Heat broiler. Slice bread in half lengthwise, then crosswise. broil cut side down on a foil llined baking sheet until browned, about 2 minutes. Let cool slightly.
Sppread cut sides iwth garlic paste. Broil, cut side up, until cheese is golden brown and bubbling. 2 mintues. Transfer to a cutting board and cut into pieces.
