Joy’s Herb & Parmesan Cheese encrusted oven Roasted Cod Fillets with Crusty Potatoes

I use Alum. Foil to make my individual "boat", but if you have small oval baking dishes, that would work great!.
This recipe starts off at 425 degree oven and then is lowered to 400 degree when its time to bake the cod. Don't forget, or your Cod will be overcooked on the outside and under cooked in the center.

Ingredients

  • Potatoes:
  • 1 1/2 cups panko bread crumbs
  • 1/2 cup fresh grated Parmesan cheese
  • 1 handful fresh flat-leaf parsley
  • 3 large garlic cloves, minced
  • 1 lemon zested, and sliced thin
  • Coarse salt to taste
  • 1 1/2 lbs. white potatoes (about 4 medium) and sliced into 1/4” thick
  • Cod:
  • 4 (6oz) skinless cod fillets, 1 to 1 1/2 “ thick
  • 1 tsp Lemon pepper
  • 4 sprigs thyme
  • 3 Tbl of Avocado oil or more if needed
  • 3 Tbl unsalted butter, cut into 1/4 “ pieces
  • 3 medium garlic cloves, minced

Step 1

Preheat oven to 425 degrees. Adjust an oven rack to the lower middle position.
Place panko crumbs in a shallow dish. Pile parsley, garlic, lemon zest, a little coarse salt on the cutting board. Finely chop the lemon-garlic mixture, then combine with ¼ cup parmesan cheese and the panko bread crumbs, and mix well. Brush the top and sides of each fillet with Avocado oil and dip in to the bread crumb herb mixture. Place onto a cooled plate, cover, and set aside, in refrigerator, until ready to use.

Tear off 4 pieces of foil large enough to make 4 – 4X6 rectangular roasting boats, with 1” rims, and place into a rectangular baking sheet. Lightly brush the 4 foil "roasting boats” with oil.

In a large bowl, toss the potatoes with 2 T oil and garlic, remaining parmesan cheese and season with salt and pepper to taste. Layer the potatoes into the 4 separate “rectangular boats”. Roast the potatoes until they are spotty brown and just tender, 30 to 35 minutes, rotating the baking sheet halfway through roasting.

Reduce Oven temp to 400 degrees.
Remove baking dish from oven to put fish on them.

Carefully place the crusted cod fillets, down on top of each set of the par-cooked potatoes. Top the fish with the butter pieces, thyme sprigs, and lemon slices, bake for 6 to 8 minutes. This recipe yields 4 servings.
