Ingredients

  • 1 cup packed brown sugar
  • 1/2 cup butter, cubed
  • 2 tablespoons corn syrup (or maple syrup or some of the peach juice)
  • 1 can (29 ounces) diced peaches, drained (Add some of the syrup to the cream cheese and mix before spreading)
  • 1 loaf (1 pound) day-old French bread, cubed
  • 1 package (8 ounces) cream cheese, cubed (Use the light version)
  • 12 large eggs
  • 1-1/2 cups half-and-half cream (Substitute 1 cup with milk)
  • 1 teaspoon vanilla extract
  • Cinnamon and nutmeg to sprinkle on top, if desired

Preparation

Step 1

In a small saucepan, combine the brown sugar, butter and syrup. Cook and stir over medium heat until sugar is dissolved.

Arrange half of the bread cubes in a greased 13x9" dish, followed by half of the peaches. Layer with cream cheese mixture (having blended it with some of the peach juice), followed by the remainder of the bread cubes and peaches. Drizzle the cooked syrup over the bread mixture.

Place the eggs, Milk/cream and vanilla in a blender; cover and process until smooth. Pour over top. Cover and refrigerate overnight.

Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Yield: 12 servings.
