Farmhouse Bacon Chopped Salad With Chicken

Adapted from a Taylor Farms mix. I like the interplay of the "sweet onion slaw" dressing and the stronger cabbage/kale flavors. The apple adds a nice sweet/crisp counterpoint. I add a grilled chicken breast that's been marinated in Olive Oil, Balsamic and Garlic. Shortcut here is to use the Farmhouse Bacon Chopped Salad mix and add the apple, avocado and grilled chicken. I also top with Gorgonzola.

Ingredients
- 1 Chicken Breast
- 2 T Olive Oil
- 2 T Balsamic
- 1 T Chopped Garlic
- salt/pepper
- Salad
- Green Cabbage
- Kale
- Romaine Lettuce
- Red Cabbage
- Carrots
- 1 apple
- 1 avocado
- 1/4 c Roasted Sunflower Seeds
- 1 Green Onion
- 1 piece Bacon
- 1/4 Gorgonzola (optional)
- Dressing
- 1/2 c. sugar
- 1/4 c. white vinegar
- 1/2 c. vegetable oil
- 1/2 tsp. celery seed
- grated onion, to taste (use 1/8 to 1/4 cup, depending on how strong the onion is)
- salt and freshly ground black pepper, to taste

Step 1
Marinate Chicken Breast with Garlic, olive oil and Balsamic Vinegar. Allow to sit in fridge for at least 4 hours. Season with salt/pepper and then grill on a grill pan. Turn a couple times to ensure it's cooked thru (about 20-30 minutes). (shortcut: you can substitute rotisserie chicken or any chicken breast chopped up). Set it aside and let it rest.
Depending on desired volume, take a few leaves of each type of lettuce/Cabbage, roll together and chop finely like a "slaw". Grate Carrots. (you can use a package mix with similar ingredients). Chop the apple into small cubes and cut up the avocado. Toss all "dry" ingredients.
Mix together all ingredients for dressing and mix thoroughly. Toss salad with dressing.
