Ingredients
- Crust:
- 3 cups flour
- 2 1/4 tsp lemon zest
- 1 cup butter
- 8 tsp ice water
- Filling:
- 6 large Granny Smith apples (peeled, sliced thin and cored)
- 1 cup sugar
- 2 tsp cinnamon
- 1/4 cup cornstarch
- 1/4 cp butter (cubed small)

Step 1
Crust:
Mix flour, lemon together. Cut in butter. Add ice water. Divide dough in half. Flatten into disks wrap in plastic and refrigerate for an hour
Filling: Combine sugar, cinnamon, and cornstarch. Add apples and toss. Preheat oven to 400 degrees.
Roll out both disks of dough into 12” rounds. Place one in greased pie plate leaving 3/4 inch overhanging edge.
Spoon in filling and sprinkle with butter bits. Put top crust on folding edges over bottom crust and crimp. Make 7 slits and brush with 1egg mixed with 1 tbsp sugar. Bake for 45 min to an hour protected crust for heat with pie cover or aluminum.
