I love the finer things in life and by finer I mean rich, creamy and loaded with lot of goodness! Sadly my waist line does not agree with my yummy food choices. I have resorted to finding alternatives to my favorites side dishes so I don’t feel like I am cheating myself out of all the goodness. I was on Facebook the other day when a friend shared a yummy recipe of Loaded Cauliflower and I must admit I may have drooled a bit! So without further adieu I am sharing with you the Yummiest Loaded Cauliflower Recipe Ever! Good-bye carbs hello Flavor!

Ingredients

  • 1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
  • 6-8 strips of bacon cooked and crumbled
  • 6 tbsp. chopped Chives
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 2 cups cheddar Cheese

Preparation

Step 1

Turn oven on to 425°
In a large pot bring cauliflower to a boil. Cook for 8-10 minutes.
Drain cauliflower and set aside to cool
Combine 1 cup of cheddar cheese, 1/2 of the crumbled bacon, 1/2 of the chives, sour cream, Mayonnaise, and cauliflower and mix well.
Place the mixture into a baking dish and sprinkle the rest cheese and bacon on top.
Bake for 15-20 minutes so the cheese will melted,
Sprinkle the reminder of the chives on top and serve.
