Fresh Tomato and Basil Pasta Sauce

If you have fresh tomatoes and basil from your garden I hope you’ll give this pasta sauce recipe a try! It makes of use of 10 medium sized tomatoes and has a delicious, rich tomato flavor. Certainly different than most pasta sauce recipes, but unique and delicious all the same. Fresh tomatoes really pump up a recipe, am I right? It also works well if you are looking for a great vegetarian sauce.

Ingredients
- 4 Tb olive oil
- 3 cloves garlic, minced
- 3 Tb fresh basil, snipped into small pieces with scissors
- 3 Tb red onion, chopped
- 10 roma tomatoes, chopped
- salt and pepper
- 2 tsp beef bullion
- 2 tsp brown sugar
- 2 tsp Johnny's Garlic Seasoning

Step 1
1. Heat a large deep skillet up over medium high heat. Pour the oil into the pan and allow it to heat through.
2. All the garlic, basil and onion to the hot skillet and saute for several minutes, stirring occasionally.
3. Add the tomatoes, salt and pepper, bullion, brown sugar and Johnny's Garlic seasoning and bring to a simmer. Cook on low for 25-30 minutes, stirring occasionally. Give it a taste and adjust the salt and pepper to your liking.
4. Serve over linguine or any other pasta of choice, and top with freshly grated Parmesan cheese.
Yield: 5-6 servings
