  • 4 oz soft goat cheese
  • 1 tbsp sliced fresh basil leaves
  • 1 tbsp chopped fresh chives
  • 1 tbsp thinly sliced scallions
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 tbsp, plus 2 tsp unsalted butter, softened, divided
  • 8 white bread slices
  • 16 thin slices sharp new york cheddar cheese
  • 16 thin slices white vermont cheddar cheese

Step 1

preheat oven to 350. mix together goat cheese, basil, chives, scallions, salt and pepper in a small bowl until incorporated.

heat 1 1/2 tsp butter in a large ovenproof skillet over medium, and swirl to coat. spread 1/2 tsp butter on 1 side of each 8 bread slices. place 2 of the slices, buttered side down, in skillet. top 1 bread slice with 4 slices of new york cheddar, and top the other slice with 4 slices of vermont cheddar. reduce heat to medium-low.

spread 1/4 cup of goat cheese mixture on one of the bread slices in the skillet. top with the other slice to form a sandwich.

transfer skillet to preheated oven, and bake until cheese is soft and melted, 4 to 5 mins.

repeat with remaining butter, bread slices and cheese to make 3 additional sandwiches. serve hot.
