Ingredients

  • 1 cup butter or margarine, softened
  • 1 cup confectioners' sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 cup salad oil
  • 2 tsps vanilla extract
  • 1 tsp grated lemon peel
  • 4 1/4 cups unsifted all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 1 tsp salt
  • Colored sugar for decoration

Preparation

Step 1

1) In large mixer bowl with electric mixer at med speed, cream butter or margarine and sugars.
2) Beat in eggs, one at a time until light and fluffy.
3) Add oil, vanilla extract and lemon peel.
4) Beat until well mixed.
5) In large bowl, combine flour, baking soda, cream of tartar and salt.
6) Gradually add dry ingredients to creamed mixture and beat until well blended.
7) Wrap and chill dough for several hours.
8) Preheat oven to 325 degrees. Grease 2 large cookie sheets.
9) Divide dough into thirds.
10) Form heaping teaspoonfuls of dough into a ball. Place on cookie sheet.
11) Flatten dough to a 2 inch diameter with bottom of a glass dipped in granulated sugar.
12) Sprinkle with colored sugar.
13) Bake 8 to 10 minutes or until just set. Let stand on baking sheet for 2 to 3 minutes before removing.
14) Makes about 7 dozen cookies about 80 calories each.
