Ingredients

  • 1 1/2 cups chopped tomatoes - I used cherry tomatoes
  • 1 cucumber, peeled and diced - I used an English cucumber
  • 1 avocado, diced
  • 4 ounces feta cheese, cubed - I didn't add this for Rosh Hashanah
  • 2 tablespoons minced red onion
  • 1 handful of parsley, minced, about 2 tablespoons
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Preparation

Step 1

Combine first 6 ingredients.
Whisk together olive oil, red wine vinegar, salt and pepper.
Toss with ingredients. Serve immediately.
(If not serving immediately, don't add avocado until you're ready to serve.
