Ingredients

  • 1/2

    cup unbleached all-purpose flour

  • 1/3

    cup unsweetened cocoa powder, sifted if lumpy

  • 1/4

    tsp baking powder

  • 1/8

    tsp salt

  • 2/3

    cup packed dark brown sugar

  • 1/4

    cup canola oil

  • 1

    lg egg + 1 lg egg white

  • 1

    tsp vanilla extract

  • 1/4

    cup miniature semisweet chocolate chips

  • 1

    cup walnuts, chopped

Directions

1.) Preheat the oven to 350 degrees F. Coat an 8" x 8" or 9" x 9" baking pan with cooking spray. 2.) Combine the flour, cocoa, baking powder, and salt in a large bowl. 3.) Combine the brown sugar, oil, egg, and egg white, and vanilla extract in a small bowl. Whisk until smooth. Pour into the flour mixture and stir until blended. Stir in the chocolate chips and walnuts (the batter will be stiff). 4.) Spread the batter in a thin layer in the prepared pan. Bake for 20 to 22 minutes or until firm at the edges and a wooden toothpick inserted off center comes out with a few moist crumbs. Place pan on a rack and let cool completely. Cut into 8 bars.
