  • 4 medium baking potatoes
  • 2 TBSP butter
  • 1/2 sour cream
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup shredded cheese (cheddar or American)
  • 2 TBSP thinly sliced green onion

Preparation

Step 1

Scrub potatoes thoroughly. Bake in 425 degree oven for 40 to 60 minutes. Cut a lengthwise slice from the top of each potato; scoop out potato and discard skin from slice only. Scoop out inside of each potato leaving 1/2 inch thick shell. Set shells aside.

Mash potato; add butter. Beat in sour cream, salt, and pepper. Stir in cheese and onion. Spoon or pipe mashed potato mixture back into shells. Place in a small baking dish. Cover and refrigerate for 2 to 24 hours.

Before serving: Bake, uncovered, in 425 degree oven for about 35 minutes for until lightly browned.
