Chicken Parmesan with Summer Squash 1 Picture

Ingredients

  • 1 1/2 lbs chicken tenders
  • 2 cloves garlic, small diced and smashed into a paste
  • 2 summer squash, halved lengthwise, cut into 1" thick pieces
  • 1 can (8oz) tomato sauce
  • 1 red onion, small diced
  • 1/2 lb fresh mozzarella cheese, torn into bite-sized pieces
  • 1 bunch basil, leaves picked from stems
  • 2/3 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese

Step 1

1. Preheat oven to 450. Pat chicken dry with paper towels; season with salt & pepper. In large pan, heat 1 Tbsp olive oil until hot. Add seasoned chicken in single layer. Cook without stirring 4-5 minutes on first side or until lightly browned. Flip the chicken; add onion and garlic paste; season with salt & pepper. Cook, stirring occasionally 3-4 minutes until slightly softened. Add the tomato sauce and 1/4 cup water; season with salt & pepper. Cook 3-4 minutes until chicken is cooked through. Season with salt & pepper to taste. Transfer to 9x11 baking dish in an even layer. Rinse and wipe out pan.

2. Top the chicken & sauce with breadcrumbs, mozzarella, and half of Parmesan. Season with salt & pepper. Bake 14-16 minutes, until cheese has melted. Remove from oven.

3. While chicken bakes, heat 1 Tbsp olive oil. Ad squash. Cook without stirring 3-4 minutes until lightly browned. Season with salt & pepper. Continue to cook 4-6 minutes until browned and softened. Transfer to serving dish. Drizzle with olive oil; season with salt & pepper. Garnish with half of basil.

4. Garnish chicken with remaining basil. Serve chicken with squash on the side.
