Ingredients
- 2 Tbsp. Olive Oil
- 1 Onion, diced
- 1 lrg Green Pepper, cut in thin strips
- 1 lrg Red Pepper, cut in thi strips
- 1 lrg Garlic clove, crushed
- 1 14 oz can Stewed tomatoes, undrained
- 1 1/2 tsp.Dried basil leaves
- 8 oz pkg Bow-tie pasta
- 4 oz Pepperoni, sliced
- 1 lrg Tomato, diced
- 3/4 tsp Salt
- 1/4 tsp Black Pepper
- 4 oz Mozzarella, diced
- Crushed red pepper (optional)
Preparation
Step 1
Cook Bow-tie pasta 8-10 mins, drain & set aside.
In a 12" skillet heat oil; add onion, both pepers & garlic; cook 2 mins, stirring often until vegeables are crisp tender.
Add stewed tomatoes & basil; bring to a boil. Reduce heat to low; simmer covered 5 mins, stirring occasionly until vegetables are tender & flavors are blended.
Add pepperoni, diced tomatoes, salt & pepper to skillet; cook 1-2 mins longer until heated through.
Add pasta to vegetable mixture along with mozzarella; toss to mix well.
