Colcannon Potatoes

Ingredients
- 8 Yukon Gold potatoes, peeled and quartered
- 1/4 C white vinegar
- 3 t salt
- 1/2 C milk, warmed
- 1/4 C butter, cubed
- 1 pinch white pepper
- 1 pinch freshly grated nutmeg
- 3 C finely sliced savoy cabbage, steamed until tender
- 2 green onions, thinly sliced
- 2 T chopped fresh italian parsley

Preparation
Step 1
1. Place potatoes in a large pot, cover with cold water and add white vinegar and 1 teaspoon of salt. Bring to a boil, lower heat, and simmer until completely tender, about 25 minutes. Potatoes are done when they can easily be pierced with a fork. Drain in a colander and let them steam-dry for 3 minutes.
2. Place potatoes back in pot, add warm milk and mash.
3. Mix in butter, remaining salt, white pepper and freshly grated nutmeg. Stir in savoy cabbage, green onions, and parsley.
