Ingredients

  • 12 cups seeded, chopped cucumber ( if regular cucumber, remove seeds)
  • 4 cups onion
  • 1 Green Pepper chopped
  • 1 Red Pepper chopped
  • 6 cups white vinegar
  • 6 cups white sugar
  • 1 cup flour
  • 1/2 tsp dry mustard
  • 1/2 tsp tumeric
  • 1 tsp celery seed

Preparation

Step 1

1. Mix the chopped cucumber and onion and peppers with 1 cup salt. Sit all night. Taste. If too much salt, rinse with water. In morning, remove water. Remove as much liquid as possible.

2. Cook the remaining ingredients, add the cucumber and onion and peppers.
Bring to a boil and cook on low heat for 30 min, stirring often.
